I’m a huge fan of classic cornbread. It’s so tasty, and it always reminds me of my favorite BBQ restaurant.
Jalapeño Cheddar Cornbread is a delicious spin on the classic version. To begin with, it’s moist. Dry and crumbly cornbread is just not appetizing to me.
The flavor is also addicting. I found myself going back again and again for just another little piece. The cheese and jalapeño peppers give it just the right amount of flavor.
I also love that the batter for needs to rest for 20 minutes and then bake for another 30. That gives me plenty of time to prepare the main dish and even another side.
Here’s what you need to make Jalapeño Cheddar Cornbread…
- Flour
- Yellow cornmeal
- Sugar
- Baking powder
- Salt
- Milk
- Eggs
- Unsalted butter
- Extra-sharp cheddar cheese
- Green onions
- Jalapeños
Jalapeño Cheddar Cornbread
JALAPEÑO CHEDDAR CORNBREAD - This moist, flavorful cornbread packs a bit of a kick and is the perfect side for your next BBQ.
Ingredients
- 3 cups flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 2 tablespoons baking powder
- 2 teaspoons salt
- 2 cups milk
- 3 eggs, lightly beaten
- 1 cup unsalted butter, melted
- 3 cups grated extra-sharp cheddar cheese, divided
- 1/3 cup green onions, chopped
- 1-2 jalapeños, minced (to taste)
Instructions
- In a large bowl whisk together the flour, cornmeal, sugar, baking powder and salt.
- In a medium-sized bowl combine the milk, eggs, and melted butter.
- Add the wet ingredients to the dry ingredients. Gently combine, careful not to overmix.
- Add 2 cups of the cheddar cheese, the green onions, and the jalapeños.
- Allow to rest at room temperature for about 20 minutes.
- Preheat the oven to 350, and grease a 9x13 pan.
- Pour the batter into the prepared pan evenly, smoothing out the top.
- Top with remaining 1 cup of cheddar cheese and extra chopped green onions.
- Bake for 30 to 35 minutes, or until toothpick comes out clean.
- Cool, serve warm or at room temperature.
