PUDDING COOKIES – Rich and chewy chocolate chips cookies made with pudding mix for extreme softness.
Pudding Cookies are fun alternative to classic chocolate chip cookies. The added ingredient of pudding mix helps to keep the cookies soft and chewy.
You can make this recipe all one flavor (vanilla) or two different flavors (vanilla and chocolate). To make 2 different flavors, simply make 2 half recipes and add vanilla pudding mix to one half, and chocolate pudding mix to the other.
When I make chocolate pudding cookies I like to use chocolate fudge pudding mix rather than regular chocolate pudding mix. The chocolate fudge pudding mix makes for a more chocolatey cookie.
I would not recommend refrigerating the dough. It will become hard and unworkable. Also, if you’re like me and sometimes like to have cookie dough on hand for snacking, this is not the dough I would use.
If you do need to refrigerate the dough, you’ll want to pull it out of the fridge and bring it to room temperature before portioning it out to bake. Store Pudding Cookies in an air tight container for 2-3 days.
