Peanut Butter & Jelly Bars are seriously addictive. They perfectly balance the amount of rich peanut butter to sweet jelly. They are a bit crumbly on the outside, but very rich and soft on the inside.
I made these bars with raspberry jelly. If that’s not your favorite combination with peanut butter, or you don’t have it on hand, you could easily substitute it for a different jelly flavor.
Peanut Butter & Jelly Bars are pretty rich. I would recommend cutting them into small portions and serving them with a tall glass of cold milk, or my personal favorite chocolate milk.
I found that the chopped peanuts mostly fell off of the bars. They looked pretty on top, but I would probably leave those out next time. I didn’t feel like they were worth the effort.

- Unsalted butter
- Sugar
- Vanilla
- Eggs
- Creamy peanut butter
- Flour
- Baking powder
- Salt
- Raspberry jam
- Peanuts
Peanut Butter & Jelly Bars
PEANUT BUTTER & JELLY BARS - Rich dessert bars made with layers of creamy peanut butter cookie and sweet raspberry jelly. These soft, crumbly bars are sure to make you feel like a kid again.
Ingredients
- 1 cup unsalted butter, room temperature
- 1 1/2 cups sugar
- 1 teaspoon vanilla
- 2 eggs, room temperature
- 2 cups creamy peanut butter
- 3 cups flour
- 1 teaspoon baking powder
- 1 1/2 teaspoons salt
- 1 1/2 cups raspberry jam
- 2/3 cups peanuts, coarsely chopped (optional)
Instructions
- Preheat the oven to 350.
- Grease and flour a 9x13 pan.
- In a stand mixer, beat together the butter and sugar until it lightens in color.
- Add in the vanilla, eggs and peanut butter. Mix unitl fully combined.
- In a small bowl, whisk together the flour, baking powder and salt.
- A little at a time add the flour mixture to the peanut butter mixture, mix until fully combined. Scrape down the sides of the mixing bowl as needed.
- Evenly spread 2/3 of the dough into the 9x13 pan.
- Evenly spread the jam over the dough.
- Top the remaining 1/3 of the dough on top of the jelly by flattening chunks and piecing it together.
- Sprinkle the chopped peanuts on top.
- Bake for 40-45 minutes, until golden brown.
- Cool and cut into small triangles.
