SIMPLE ROASTED ZUCCHINI – This zucchini is simple, wholesome, and a nutritious addition to any meal.
If you’ve ever wondered why I don’t have many vegetable recipes on my blog, here’s the reason… a lot of the time I just like to roast them. Simple Roasted Zucchini is a perfect example of what I generally do.
Roasted veggies are easy, healthy, and they allow me to focus more on the main dish. I also tend to not feel as guilty if the main dish happens to be more on the fattening side.
I usually cook up enough to have plenty of leftovers. Simple Roasted Zucchini heats up well in the microwave. It’s also a great addition to a meal on the go.
If you do end up with leftovers, keep them in an airtight container in the fridge. The zucchini should be good for 3-4 days.
Here’s what you need to make Simple Roasted Zucchini…
- Zucchini
- Olive oil
- Salt
- Pepper
- Garlic powder
Simple Roasted Zucchini
SIMPLE ROASTED ZUCCHINI - This zucchini is simple, wholesome, and a nutritious addition to any meal.
Ingredients
- 3 medium-sized zucchini
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Pinch of garlic powder
Instructions
- Preheat oven to 375.
- Trim off the stem and root ends of the zucchini. For each zucchini, cut in half length-wise, then cut each half length-wise again to create 4 spears. Cut the spears into 1/2 to 1 inch segments.
- Add the cut zucchini into a medium-sized bowl.
- Add the olive oil, salt, pepper, and garlic powder. Stir until the zucchini is evenly coated.
- Line a sheet pan with parchment paper.
- Evenly spread the coated zucchini on top of the parchment paper.
- Bake for 10 minutes, stir the zucchini.
- Bake for an additional 10 mintues.
- Add additional salt and pepper to taste.
