Who’s ready for Fall? I can’t say I’m fully ready for Summer to be over, but I can feel the crisp weather coming and I can’t help but get excited.
When I think about Fall, I start to think about all the yummy Fall foods that I can’t wait to make. Caramel Apple Cider Cookies are definitely on that list more than once.
These cookies are perfect for those apple cider fans out there. Imagine a warm mug of cider, but in cookie form!
Caramel Apple Cider Cookies are best served warm. I recommend eating them fresh out of the oven, or you can heat them in the microwave for about 10 seconds.
Store cooled cookies in an airtight container. To help keep them soft include a slice of white bread. You will just want to make sure to keep it separate from the cookies.

- Unsalted butter
- Sugar
- Salt
- Alpine Spiced Apple Cider Instant Drink Mix
- Eggs
- Vanilla
- Baking soda
- Baking powder
- Cinnamon
- Flour
- Caramel bits
Caramel Apple Cider Cookies
CARAMEL APPLE CIDER COOKIES - These soft, scrumptious cookies are flavored with apple cider and chewy caramel bits. They're the perfect way to celebrate Fall.
Ingredients
- 1 cup unsalted butter, room temperature
- 1 cup sugar
- 1/2 teaspoon salt
- 1 (7.4 ounce) box of Alpine Spiced Apple Cider Instant Drink Mix - 10 packets (do not use sugar free)
- 2 eggs, lightly beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 3 cups flour
- 1 cup caramel bits (the kind used for easy melting)
Instructions
- Preheat oven to 350. Line a baking sheet with parchement paper.
- In a stand mixer add the butter and sugar, beat until fully incorpartated and lightened in color.
- Add in the salt and the contents of all 10 packets of the apple cider drink mix, beat until fully incorporated.
- Add in the eggs, vanilla, baking soda, baking powder, and cinnamon. Mix until fully incorporated, but careful not to overmix.
- Add in the flour 1/2 cup at a time, mixing after each addition, but careful not to overmix.
- Add in the caramel bits, mix until just barely combined.
- Using a 2 tablespoon-sized cookie scoop, portion out the dough and place on the parchment covered cookie sheet, spaced about 2 inches apart.
- Bake for 12 minutes. They should be fairly light in color and slightly undercooked.
- Let the cookies rest on the cookie sheet for about 5 minutes before moving them to a cooling rack.
