Sometimes all you want is a good, simple recipe. A delicious, uncomplicated dish that’s easy to make and appetizing at the same time.
Simple Roasted Mushrooms is just the thing. The recipe requires very few ingredients, and very little prep time. And the end product is delightful.
These mushrooms are also tasty enough to earn me a compliment from my teenage son. Who willingly warmed them up to enjoy the next day, completely on his own!
Simple Roasted Mushrooms calls for fresh thyme. I have found the best way to store fresh thyme is to wrap it in a damp paper towel, making sure to squeeze all of the water out before wrapping it up.
Then I place that in a ziplock bag, squeezing out as much air as possible, and store it in the fridge. I also like to label the ziplock bag, because I will inevitably forget what it is and when I bought it.

- White button mushrooms
- Extra virgin olive oil
- Salt and pepper
- Fresh thyme
Simple Roasted Mushrooms
SIMPLE ROASTED MUSHROOMS - This nearly effortless mushroom recipe is a delightful and nutritious addition to any meal.
Ingredients
- 1 1/2 pounds white button mushrooms
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- 6-8 springs fresh thyme
Instructions
- Preheat oven to 400.
- Line a 1/2 baking sheet (13x18) with parchment paper.
- Clean the mushrooms and cut them into quarters.
- In a large bowl, add the cut mushrooms and olive oil. Stir to cover the mushrooms.
- Add salt and pepper to taste.
- Add the seasoned mushrooms to the baking sheet.
- Top the mushrooms with the thyme sprigs.
- Roast for 30-45 mintues, until most or all of the liquid has evaporated from the mushrooms.
- Remove from oven and discard the thyme sprigs.
- Add additional salt and pepper as needed.
- Serve immediately.
