HAVARTI PASTA SALAD – Havarti cheese, sun dried tomatoes and olives are the champions of this pasta salad immersed in a balsamic vinaigrette.
This is an upscale, yet easy pasta salad. It’s a great choice if you’re looking for something to share at a gathering.
You can make this salad a day ahead and refrigerate overnight. I actually think it tastes better the second day.
Can’t find havarti? Not a problem. You can always use mozzarella cheese instead. You can also substitute regular penne for the mini penne.
Do make sure to use fresh parsley and not dried. Fresh parsley really makes a big difference in this salad.

- Mini penne pasta
- Havarti cheese
- Oil-packed sun dried tomatoes
- Sliced olives
- Fresh parsley
- Balsamic vinegar
- Brown sugar
- Salt
Havarti Pasta Salad
HAVARTI PASTA SALAD - Havarti cheese, sun dried tomatoes and olives are the champions of this pasta salad immersed in a balsamic vinaigrette.
Ingredients
- 2 cups uncooked mini penne pasta
- 1 cup cubed havarti cheese
- 1/2 cup oil-packed sun dried tomatoes, chopped
- 1/4 cup sliced olives
- 1/4 cup chopped fresh parsley
- 1/3 cup balsamic vinegar
- 2 teaspoons brown sugar
- 1/4 teaspoon salt
Instructions
- Cook the penne as directed, rinse with cold water and drain.
- Drain the tomatoes and reserve 1/4 cup of the oil. If there is not enough oil in the jar you can add extra virgin olive oil until it measures to 1/4 cup.
- Combine the pasta, cheese, tomatoes, olives and parsley in medium sized bowl.
- Mix the oil, vinegar, brown sugar and salt in a blender until fully combined.
- Toss oil mixture with the pasta.
- Cover and refrigerate for at least 30 mintues before serving.
