CHICKEN AND LIME SOUP – Chicken, green chiles, lime and cilantro come together in a family favorite. This flavorful soup is sure to please!
This is one of my family’s favorite cold weather meals. It looks like a long list of ingredients, but don’t worry it comes together pretty fast.
You can eat the soup with tortilla strips (as seen in the pictures and generally found near the produce section). We usually use strip-shaped tortilla chips to scoop up all the goodness and eat it almost like a dip.
Alternatively, you could crumble regular tortilla chips on top to add a little crunch.
Don’t forget the toppings! The avocado and shredded cheese are the perfect additions to this soup.
Here’s what you need to make Chicken and Lime Soup…
- Extra virgin olive oil
- Onion
- Garlic cloves
- Chicken broth
- Rotel
- Diced green chiles
- Skinless chicken breasts
- Cooked rice
- Fresh lime juice
- Garlic salt
- Salt
- Pepper
- Cilantro
- Avocados
- Shredded cheddar cheese
- Tortilla chips

Ingredients
- 2 tablespoons extra virgin olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 80 ounces chicken broth
- 10 ounces Rotel
- 1 (4 ounce) can diced green chiles
- 4 medium skinless chicken breasts, cooked and shredded
- 2 1/2 cups cooked rice
- 1/4 cup fresh lime juice
- 1/2 teaspoon garlic salt
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 bunch of fresh cilantro, chopped
- 2 avocados, diced and drizzled with lime juice
- 1 cup shredded cheddar cheese
- Tortilla chips
Instructions
- Saute onion in oil over medium heat until translucent.
- Add the garlic and cook for 1 minute.
- Add the chicken broth, Rotel, green chiles, chicken, rice, lime juice and seasonings.
- Cook until warmed through.
- Add the cilantro.
- Serve with avocado, cheese and chips.
