Do you love horchata? Do you love strawberries? Then you will absolutely LOVE Strawberry Horchata. It is truly refreshing and delicious.
What I really love about this drink is how perfectly balanced the fresh strawberries are with the creamy rice and cinnamon flavors. It really is an incredible combination.
If you’ve never made horchata at home, it’s much easier than you might think. Honestly, I find the hardest part to be just waiting for it to strain.
Horchata is best served cold, which is why the suggestion is to serve it over ice. However, if you’re serving it straight out of the fridge, feel free to forgo the ice. It’s already nice and cold.
Store leftovers in an airtight container in the fridge for 4-5 days. Stir before serving to reincorporate any settling that may have occurred.

Here’s what you need to make Strawberry Horchata…
- Uncooked white rice
- Hot water
- Cinnamon stick
- Granulated sugar
- Fresh strawberries
- Whole milk
- Pure vanilla extract
- Sweetened condensed milk
- Evaporated milk
- Ice cubes
Strawberry Horchata
STRAWBERRY HORCHATA - Fresh strawberries are a delicious addition to this creamy flavorful drink made with milk and ground rice.
Ingredients
- 1 1/2 cups uncooked white rice
- 4 cups hot water
- 1 small cinnamon stick
- 3/4 cup granulated sugar
- 1 pound fresh strawberries, washed and quartered
- 4 cups whole milk, divided
- 1 teaspoon pure vanilla extract
- 1 (14 ounce) can sweetened condensed milk
- 1 (12 ounce) can evaporated milk
- Ice cubes
Instructions
- Wash the rice by placing it in a bowl and filling with water. Use your hands to swirl the rice around until the water becomes cloudy. Drain out the water, and repeat the process until the water no longer becomes cloudy when swirling around. Thoroughly drain the water out in a colander.
- Pour the cleaned rice into a medium-sized bowl. Add in the hot water and cinnamon stick. Cover.
- Allow the rice to soak for at least 4 hours, and even better to soak the rice overnight if you have time.
- Pour the soaked rice and water mixture into a blender. Add in the sugar. Blend on high speed until smooth.
- Using a fine-mesh strainer, strain the liquid unto a pitcher. DO NOT SKIP THIS STEP! The better that you can strain the liquid, the less of a "gritty" texture you'll get with the final product.
- Thoroughly clean out the blender and strainer, discarding the contents of the strainer.
- In the clean blender, add 1 cup of the whole milk and the washed fresh strawberries. Blend on high until smooth.
- Using the clean strainer, strain the strawberry mixture into the pitcher with the strained rice mixture, discard the contents of the strainer. Again, do not skip this step.
- Add the remaining 3 cups of whole milk, vanilla extract, sweetened condensed milk, and evaporated milk to the pitcher. Whisk to combine.
- Serve over ice.
