SODA-GLAZED PECANS – Candied pecans that taste just like your favorite soda flavor!
Here’s what you need…
- Cola or root beer soda (not diet or zero sugar)
- Butter
- Pecan halves
- Salt
Let’s get started…
The first thing you’re going to do is get your oven preheated to 350, and then cover a sheet pan with aluminum foil. Make sure the sheet pan has raised sides and that there are no holes or gaps in the aluminum foil.
Pull out a small saucepan and add 1 cup of soda (not diet or zero sugar) and 2 tablespoons of butter. Any flavor or brand of root beer or cola will work. I’m a root beer fan, so I used Barq’s Root Beer. Set the heat to medium-high and bring the liquid to a boil.
DO NOT step away from the saucepan while the soda is boiling. You may need to lower the heat or shorten the time. Keep an eye on the liquid, you want a low steady boil until it reduces to half. This should take 10-15 minutes.
Once the liquid has reduced to half, add 1 cup of pecan halves. Stir to coat the nuts completely. Cook for an additional 3-4 minutes until the liquid begins to thicken and get sticky. A little extra liquid is okay, the most important part is to prevent burning.
Add a pinch of salt to the coated nuts, and stir to combine. Transfer the pecans to the prepared sheet pan. Bake for 5-10 minutes, stirring them after about 3-4 minutes of baking. You will know the pecans are toasted and ready to remove from the oven when you can smell the unmistakable toasted scent.
Let the pecans rest on the sheet pan and cool for a few minutes before serving them. The candied soda glaze is a bit sticky, but oh, so good! You can really taste the soda flavor.
Tips & Tricks…
No diet or zero sugar sodas: This recipe works best with original colas and root beers.
Keep your eyes on the stove: Anytime you’re working with sugar and heat, there’s going to be a possibility for burning. Keep watch and use common sense.
