THAI COCONUT SOUP – Coconut, lime and ginger are a beautiful combination in this flavorful and easy to make soup.
Thai Coconut Soup is always a hit at my house. Even my son, who does not generally enjoy soup, loves this dish.
It’s a really quick meal to make, perfect for busy weekdays. It’s even quicker if you already have the chicken cooked and ready to shred.
I recommend wearing gloves when you cut up the jalapeño. I had a bad experience once, and now I aim to be extra careful. Let’s just say that you don’t ever want to get jalapeño juice in your eye, ever.
I generally serve this soup with rolls on the side. Don’t skip out on the cilantro, green onions and lime wedges for the topping. They really finish off the soup nicely.

- Olive oil
- Jalapeño pepper
- Ginger paste
- Chicken broth
- Coconut milk
- Salt
- Ramen noodles
- Mushrooms, sliced
- Fresh lime juice
- Chicken
- Cilantro
- Green onions
- Lime wedges
Thai Coconut Soup
THAI COCONUT SOUP - Coconut, lime and ginger are a beautiful combination in this flavorful and easy to make soup.
Ingredients
- 1 teaspoon olive oil
- 1 1/2 tablespoons jalapeño pepper, minced
- 1 1/2 tablespoons ginger paste
- 2 (14.5 ounce) cans chicken broth
- 1 (13.5 ounce) can coconut milk
- 1/2 teaspoon salt
- 2 packages ramen noodles
- 1 cup mushrooms, sliced
- 1 1/2 tablespoons fresh lime juice
- 1 1/2 cup chicken, cooked and shredded
- 2 tablespoons cilantro, chopped (more for garnish)
- Sliced green onions and lime wedges (for garnish)
Instructions
- Heat medium soup pot to medium heat.
- Add oil and jalapeño. Cook 1-2 minutes, stirring occationally.
- Add in the ginger paste, chicken broth, coconut milk and salt. Whisk to comine.
- Turn heat up to high, bring to a boil.
- Turn heat down to a simmer, add in noodles (discard the flavor packets) and cook for 2 minutes.
- Add in the mushrooms and cook for another 2-3 minutes.
- Add in the chicken and heat until warmed through.
- Remove soup from heat and add in lime juice and cilantro.
- Serve topped with chopped cilantro and green onions. Set out lime wedges on the side to add more lime juice to taste.
