ALMOND CHICKEN TENDERLOINS – Chicken tenderloins breaded and pan fried, then topped with warm lemon butter and sliced almonds. It’s a quick and easy dish that is anything but boring.
Almond Chicken Tenderloins is one of my go-to weeknight recipes. I love it because the prep time is minimal, the tenderloins cook up in minutes, and it’s always well received.
I generally serve the chicken tenderloins with a simple rice dish and a green salad or roasted vegetables. It’s such a versatile dish that I can pair almost anything with it.
This recipe could also work with regular chicken breasts. The cooking time would just need to be adjusted for the larger cut of meat.
Fresh is always best. However, if you don’t have fresh lemon juice or fresh parsley on hand, bottled lemon juice and dried parsley flakes will work in a pinch.
You can store leftovers in an airtight container in the fridge for 2-3 days.

- Fresh lemon juice
- Fresh parsley
Almond Chicken Tenderloins
ALMOND CHICKEN TENDERLOINS - Chicken tenderloins breaded and pan fried, then topped with warm lemon butter and sliced almonds. It's a quick and easy dish that is anything but boring.
Ingredients
- 1/4 cup almond flour
- 1/4 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon pepper
- 1 1/2 pounds chicken tenderloins, fat and tendons trimmed
- 1 teaspoon salt
- 6 tablespoons butter
- 2 tablespoon extra virgin olive oil
- 1/2 cup sliced almonds
- Juice from 1 lemon
- Fresh parsley, for garnish
Instructions
- In a pie tin, whisk together the almond flour, all-purpose flour, garlic powder, onion powder, Italian seasoning, and pepper.
- Place the prepared chicken tenderloins on a plate. Evenly sprinkle the salt, covering both sides of the chicken.
- Heat 2 tablespoons of butter and 2 tablespoons of extra virgin olive oil in an extra large skillet set to medium heat.
- Coat each chicken tenderloin in the flour mixture and add to the heated pan in a single layer. Cook until golden brown on the bottom.
- Turn the chicken, and cook until golden brown on the bottom and cooked through.
- Remove the chicken to a serving platter.
- Using a paper towel, clear out any overcooked remnants on the skillet.
- Return the skillet to the burner, add remaining 4 tablespoons of butter, and heat to medium heat.
- Once the butter is melted, add in the almond slices. Cook until golden, stirring periodically.
- Remove the pan from the heat, add in the lemon juice, and stir to combine.
- Pour the butter mixture over the cooked chicken tenderloins.
- Sprinkle fresh parsley over the top, serve immediately.
Notes
If you don't have an extra large skillet, you can use a smaller one and pan fry the chicken in two batches. If you do this, you will want to wipe the skillet clean between batches (using an additional 2 tablespoons of butter and 2 tablespoons of olive oil for the second batch).
