If you have ever dropped a child off at college you know how hard and stressful that can be. Just recently my husband and I had the task of dropping off not one, but two, daughters off at college… on opposite sides of the United States… at the same time… just one week after moving our whole family to a new area.
The word “stressful” cannot adequately describe the past few months. But, I will say that being so busy did help keep my mind off of the fact that two of my babies where moving so far away.
Because my girls moved in at the same time, my husband and I had to divide up and each one of us accompanied one daughter to help them move in. I had the privilege of helping my oldest daughter move to Hawaii. While we were there a dear friend introduced us to a cute little taco place that serves the most incredible pineapple salsa.
Once I returned home that same friend was kind enough to share a recipe she found that is identical to the one we tasted in Hawaii. Aloha Pineapple Salsa takes me back to the precious time I was able to spend there with my daughter.
If you like your salsa with a little more heat you can leave in the jalepeño seeds. I’m always a bit of a wimp when it comes to heat, so I take the seeds out.
Here’s what you need to make Aloha Pineapple Salsa…
- Pineapple
- Garlic
- Jalapeño
- White onion
- Cilantro
- Lime
- Salt
Aloha Pineapple Salsa
ALOHA PINEAPPLE SALSA - Fresh pineapple with the perfect combination of sweet and spicy. This 5 minute salsa tastes like an island getaway.
Ingredients
- 2 cups fresh pineapple, chopped
- 1 garlic clove
- 1/2 - 1 jalapeño, minced (omit seeds)
- 1/2 cup white onion, roughly chopped
- 1/2 cup fresh cilantro
- Juice from 1 lime
- Salt to taste
Instructions
- Layer the pineapple, garlic, jalapeño and onion into a blender or food processor. Blend on low (or pulse) until mostly combined, the salsa should be about the consistency of a chunky applesauce.
- Add in the cilantro, lime juice and salt. Pulse until combined.
