ANGEL HAIR PASTA WITH LEMON & BASIL – Light and fresh pasta made with fresh lemons and basil. This delightful dish is incredibly simple and ready in minutes.
Here’s what you need…
- Angel hair pasta
- Olive oil
- Lemon
- Fresh basil leaves
- Black pepper
- Fresh grated parmesan cheese
Let’s get started…
First you’re going to cook the pasta. Fill a large stock pot with water, about 2/3 full. Turn the heat to high, and wait for the water to reach a rolling boil (about 10 minutes). Go ahead and throw the pasta into the boiling water. Boil until cooked, about 3-5 minutes. Turn off the heat.
Place a large colander in the sink, and carefully pour the boiling water with the noodles into the colander. Give the colander a good shake to release any excess water. Pour the noodles into a medium sized bowl.
Add the remaining ingredients (except the parmesan cheese) to the bowl with the pasta. See Tips & Tricks to learn how to chop the basil. Using a pair of tongs, lift and twist the ingredients until fully incorporated.
Portion out the pasta onto serving plates. Sprinkle with desired amount of fresh grated parmesan cheese. Garnish with lemon slices and basil leaves (optional). Serve with grilled chicken (or another protein) and garlic bread for a complete meal.
Tips & Tricks…
Chopping basil: Stack leaves, roll them up the long way, and slice them into thin ribbons. I used most of a 3 ounce package of basil to yield 1/4 cup for the recipe.
Zesting: If you don’t already own a good zester, do yourself a favor and get one.
Don’t break your pasta: Let the ends stick out of the boiling water, wait about 1 minute for the bottoms to soften up, bend them down until the noodles are entirely submerged. You should be able to easily twirl the cooked spaghetti around a fork.
