Who does’t love a good breakfast sandwich? You get all your favorite breakfast foods into one bite, and they’re perfect for mornings on the go.
Bacon & Eggs Breakfast Sliders are simple and delicious, a perfect way to quickly feed a crowd. I’m always game for cheesy eggs with bacon, and I especially love the butter glaze on top.
Are you planning to feed a bigger crowd? You can add a little variety by loading 1/3 of the sandwiches with bacon, 1/3 with breakfast sausage, and the remaining 1/3 with ham.
Are you having a hard time finding brioche slider buns? Don’t worry, there are plenty of other options. Hawaiian Rolls also work great, but sometimes you just have to work with what’s available.
I would just recommend using something that is smaller than a hamburger bun with as little empty space as possible between the buns. I usually find what I need in the bakery section rather than the bread isle.
Store leftovers an airtight container in the fridge for up to 2-3 days. Reheat in the microwave or covered in the oven.

- Bacon

- Unsalted butter
- Fresh parsley
- Salt and pepper
Bacon & Eggs Breakfast Sliders
BACON & EGGS BREAKFAST SLIDERS - These fun and inviting breakfast sandwiches are filled with eggs, bacon, and melty cheese. They're perfect for feeding a crowd and breakfast on the go.
Ingredients
- 10 large eggs
- 1/4 cup milk
- 1 tablespoon butter
- 12 brioche slider buns
- 1/2 pound bacon, cooked and cut into 1/2 inch strips
- 8 slices Colby jack cheese
- 1/4 cup unsalted butter
- 1 teaspoon chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 350.
- Line a cookie sheet with parchment paper.
- Without separating the buns from each other, slice the buns in half lenghtwise. Place the bottom half of the buns onto the parchment-covered cookie sheet, placing all the buns close together into a semi-square shape.
- Layer the buns with 4 slices of cheese.
- In a medium sized bowl, add the eggs and milk. Whisk to combine.
- Add salt and pepper to taste, whisk to combine.
- In a large non-stick skillet set to medium-low heat, melt the butter and spread it to coat the bottom of the pan.
- Add in the eggs, cook and stir until the eggs are nearly cooked through. They will continue to cook in the oven.
- Spread the eggs over the cheese, evenly distributed.
- Sprinkle the sliced bacon on top of the eggs, evenly distributed.
- Layer the remaining 4 slices of cheese on top of the bacon and eggs.
- Top with the top halves of the sliced buns.
- In a small microwaveable bowl, melt the unsalted butter.
- Add the chopped fresh parsley, and salt and pepper to taste. Whisk to combine.
- Spread the melted butter mixture over the tops of the buns.
- Loosely cover the sliders with aluminum foil.
- Bake for 15 minutes, or until the cheese is completely melted and the eggs are completely cooked.
- Serve immediately.
