Cold weather always gets me excited for soup season and Baked Potato Soup is consistently at the top of the list of soups I make as soon as possible! It’s also one of my all-time favorite comfort foods.
This soup is perfect for a cold day. The recipe makes plenty to share with friends and neighbors, and it’s a perfect way to use leftover baked potatoes.
You’ll want to take your time thickening up the soup (step 3). It may seem like it’s taking forever to thicken, but it’s SO worth it.
The soup keeps really well in the fridge. You can easily make it ahead of time and warm it up as needed.

- Margarine
- Flour
- Milk
- Large potatoes, baked
- Green onions
- Bacon
- Shredded cheddar cheese
- Sour cream
- Salt
- Pepper
Baked Potato Soup
BAKED POTATO SOUP – A perfect comfort food for a cold Winter day. This soup is creamy, filling and complete with all the classic toppings of a loaded baked potato.
Ingredients
- 2/3 cup margarine
- 2/3 cup flour
- 7 cups milk
- 4 large baked potatoes, peeled and cubed
- 2 green onions, chopped
- 1 pound of bacon, cooked and crumbled
- 1 1/4 cups shredded cheddar cheese
- 1 cup sour cream
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Instructions
- Melt margarine in large stock pot over medium heat.
- Add in the flour and whisk until smooth.
- Gradually add the milk. Whisk constantly until thick (this can take several minutes).
- Stir in the potatoes and green onion, bring to a boil stirring often.
- Reduce heat to low and simmer for 10 mintues.
- Add in the bacon, cheese, sour cream, salt and pepper. Cook until cheese is completely incorporated.
