Tips and Tricks
For the waffles: Store the waffles in an airtight container in the fridge for 3-4 days. You can also freeze them for up to 6 months. To reheat waffles, from the fridge or freezer, use a toaster oven, air fryer, or oven.
For the syrup: The berries tend to be pretty squished by the end of simmering. If you have fresh berries on hand, try adding a few close to the end of simmering. Store the syrup in the fridge for 2-3 days. Reheat on the stove or in the microwave before serving.

BELGIAN WAFFLES WITH MIXED BERRY SYRUP - Light and fluffy Belgian waffles covered a in delicious mixed berry syrup.
Ingredients
Belgian Waffles
- 2 1/4 cups all purpose flour
- 1 tablespoon baking powder
- 3 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 2 eggs, separated
- 1/2 cup vegetable oil
- 2 cups milk
- 1 teaspoon vanilla extract
Mixed Berry Syrup
- 3 1/2 cups frozen mixed berries (about 14 ounces)
- 1 cup granulated sugar
- 5 tablespoons water, divided
- 3 teaspoons cornstarch
- 1 lemon, juiced
Instructions
- For the waffles: preheat the waffle iron.
- In a large bowl, add the flour, baking powder, sugar, salt, and cinnamon. Whisk to combine.
- In a medium bowl, add the egg whites. Beat with a hand mixer until stiff peaks form. Set aside.
- In a second medium bowl, add the egg yolks, vegetable oil, milk, and vanilla extract. Whisk to combine.
- Slowly add the egg yolk mixture to the flour mixture, whisk to combine.
- Adding about 1/3 at a time, carefully fold the egg whites into the combined flour and egg mixture.
- Spray the waffle iron with non stick spray just before adding a portion of the batter.
- Cook according to the waffle iron directions, until golden brown.
- Set aside cooked waffles and continue portioning out the batter and cooking until it's all used.
- For the sauce: in a medium saucepan, add the frozen mixed berries, sugar, and 4 tablespoons of water. Set the heat to medium and bring to a boil.
- Set the heat to medium-low.
- In a small bowl combine the remaining 1 tablespoon of water and the cornstarch. Whisk to combine. Slowly add the cornstarch mixture to the berry mixture, stirring while adding.
- Simmer for 10-15 minutes, until it reduces a bit.
- Add in the lemon juice, stir to combine.
- Serve warm over the the Belgian waffles.
