Bite-sized desserts are my jam, but I’m a total sucker for truffles. There’s just something so irresistible about them.
Biscoff Truffles are no exception, they are scrumptious! Even my son, who isn’t always interested in desserts, told me they are incredible.
This recipe call for white vanilla flavored melting wafers. I have found melting wafers to be the most efficient way to coat a truffle. It hardens quickly and never sweats.
If you don’t have melting wafers on hand, or you prefer not to use them, you can use white chocolate chips instead. Heat them in the microwave in 30 second increments, stirring in between, until melted and smooth.
Store Biscoff Truffles in and airtight container in the fridge for up to 3 days.

- Biscoff cookies
- Biscoff Cookie Butter
- Cream cheese
- White vanilla flavored melting wafers
Biscoff Truffles
BISCOFF TRUFFLES - Rich, indulgent truffles made with Biscoff Cookies, cookie butter, and cream cheese. These irresistible bite-sized treats assemble in just minutes.
Ingredients
- 45 Biscoff cookies, processed into fine crumbs
- 1/4 cup, plus 1 tablespoon Biscoff Cookie Butter
- 8 ounces cream cheese, at room temperature
- 10 ounces white vanilla flavored melting wafers
Instructions
- In a stand mixer, add the cream cheese. Using the paddle attachment mix until smooth.
- In a microwave safe bowl add 1/4 cup cookie butter. Heat for 15-20 seconds, stir.
- Add the warmed cookie butter to the stand mixer. Mix until fully incorporated.
- Add the processed cookie crumbs. Mix until fully incorporated.
- Using a 1 tablespoon sized scoop, portion out the dough and place on a cookie sheet lined with parchment paper.
- Chill the portioned dough for at least an hour.
- In a microwave safe bowl, heat the melting wafers according to package directions.
- Dip each of the truffles into the melted wafers, careful to let excess drip back into the bowl.
- Set coated truffles aside on a sheet of parchment.
- Once all the truffles are coated, add the remaining 1 tablespoon of cookie butter to the leftover melted wafers. Pipe onto the top of the truffles for decoration.
- Allow truffles to set until outer shell is fully solidified.
