Carne Asada is a new recipe in my collection, but I can already see that it will be frequently requested. I will definitely be adding it to my go-to recipes for when I’m entertaining.
This is one of those wonderful dishes that can be used for multiple purposes. It’s great as a taco filler, but would be just as delicious with burritos, quesadillas, nachos, or even sandwiches.
Carne Asada is traditionally cooked on an outdoor grill. If outdoor grilling isn’t the most convenient way to cook for you, a grill pan or cast iron skillet will do just as well.
However you decide to grill it, don’t forget to warm up your tortillas before serving! I like to wrap mine up in a cloth towel and heat them in the microwave for 30 seconds or more, depending on how many I’m heating at a time.
Store leftovers in an airtight container in the fridge for 3-4 days.

Here’s what you need to make Carne Asada…
- Skirt, flank, or flap steak
- Olive oil
- Lime juice
- Orange juice
- Cilantro
- White onion
- Jalapeño pepper
- Garlic cloves
- Salt
- Fresh ground black pepper
- New Mexico chili powder
- Garlic powder
- Onion powder
- Cumin (optional)
- Dried oregano

CARNE ASADA - Flank steak beautifully marinated in citrus juices with onions, jalapeños, garlic, and spices. This taco and burrito filler is easy and unbelievably delicious!
Ingredients
- 3 pounds skirt, flank, or flap steak
- 1/4 cup olive oil
- Juice of 4 limes
- Juice of 2 oranges
- 1/2 cup chopped fresh cilantro
- 1/2 white onion, sliced
- 1 jalapeño pepper, minced
- 2 garlic cloves, minced
- 1 1/2 tablespoon salt
- 1 tablespoons fresh ground black pepper
- 1 tablespoon New Mexico chili powder
- 1 1/2 teaspoon garlic powder
- 1 1/2 teaspoon onion powder
- 1 teaspoon cumin (optional)
- 1 teaspoon dried oregano
Instructions
- If you're planning to use and outdoor grill, leave the steak whole. If you're planning to use a grill pan or cast iron skillet, slice the steak into thin strips and layer it on the bottom of a 9x13 pan, spread evenly.
- In a medium-sized mixing bowl, add the remainder of the ingredients. Whisk to combine.
- Pour the marinade over the steak.
- Cover and refrigerate for at least 4 hours.
- Allow the steak to rest at room temperature for about an hour before you're ready to cook it.
- For an outdoor grill: heat the grill to high. Grill the steak about 2 minutes per side, until cooked to desired doneness. Slice into thin strips after resting for 5 minutes.
- For a grill pan or cast iron skillet: heat to medium-high heat. Cook the steak strips 8-10 minutes, turning as needed, until evenly and completely cooked. This may need to be done in batches depending on the size of the pan you're using. Allow the steak to rest for about 5 minutes before serving.
- Serve as filler for tacos, burritos, quesadillas, nachos, or whatever sounds good for you,
