CHEESY CHICKEN ENCHILADAS – These quick and easy chicken enchiladas are smothered in a creamy green chiles sauce.
This recipe is adapted from an old family recipe, and it’s a classic in my house. The enchiladas are easy to make and really tasty. They’re also a great use for leftover chicken.
If you’re using burrito-sized tortillas you may have to squish up the ends a little to fit them into the 9×13 casserole dish. You can smother them completely with the sauce or leave the ends open (as pictured) to add a little crunch.
I generally double the recipe so we can enjoy them as leftovers the next day. Who doesn’t love an evening that you don’t have to cook?
If you want to double the recipe I recommend you wait to smother the second pan until just before baking. If you smother the enchiladas too early you might end up with soggy tortillas.

- Tortillas
- Chicken
- Shredded cheddar cheese
- Cream of chicken soup
- Chicken broth
- Sour cream
- Diced green chiles
- Salt
- Pepper
- Tomato
- Limes
- Cilantro
Cheesy Chicken Enchiladas
CHEESY CHICKEN ENCHILADAS - These quick and easy chicken enchiladas are smothered in a creamy green chiles sauce.
Ingredients
- 7 large tortillas
- 2 1/2 cups of chicken, shredded
- 3 cups shredded cheddar cheese, divided
- 1 (10.5 ounce) can cream of chicken soup
- 1 cup chicken broth
- 1/4 cup sour cream
- 1/2 (4 ounce) can of diced green chiles
- Salt and pepper to taste
- 1 tomato, seeded and diced
- 1-2 limes
- Cilantro, chopped
Instructions
- Preheat oven to 350.
- Warm tortillas for 30 seconds in microwave.
- Fill each tortillas with 1/3 cup chicken and 1/3 cup cheese each, lined along the center.
- Roll tortillas up, line in 9x13 pan along short side.
- Whisk together cream of chicken soup, chicken broth, sour cream, green chiles, salt and pepper.
- Smother enchiladas with sauce.
- Top with remaining cheese.
- Bake for 20 minutes until sauce is bubbly.
- Top with tomatoes, juiced lime, cilantro and serve.
