CHEESY GARLIC MASHED POTATOES – Smooth and creamy mashed potatoes made with cheddar jack cheese, garlic, and scallions.
Here’s what you need
- Potatoes
- Butter
- Scallions
- Garlic
- Whole milk
- Shredded cheddar jack cheese
- Plain yogurt
- Salt and pepper
Let’s Get Started
Add about 3 quarts of water and 1 tablespoon of salt to a large stock pot. Carefully add the cubed potatoes and bring the water to a boil.
Once the water begins to boil, lower the heat to a simmer and boil uncovered for 10-15 minutes or until the potatoes are done (see Tips & Tricks below to determine when the potatoes are ready to mash).
While the potatoes are boiling, it’s time to make the garlic butter. Pull out a medium-sized saucepan, and melt the butter on a medium-low heat. Add in the garlic and scallions, and cook until the garlic is fragrant and the scallions have softened up. Remove the pan from the heat and set aside.
At this point the potatoes should be ready. Remove the potatoes from the heat and drain in a colander in the sink. Transfer them to a stand mixer fitted with a whisk attachment.
Whisk on medium speed until the potatoes are mashed. Add in the garlic butter and whisk again to combine. Add in the yogurt, milk, shredded cheese, and salt and pepper to taste. Whisk again until fully incorporated and smooth. Serve with additional cheese and scallions on top.
Tips & Tricks
Cubing potatoes: For best results, cut the potatoes into 1 – 1 1/2 inch cubes.
Determine when potatoes are done: You will know the potatoes are ready to drain and mash when they easily fall apart when pressed with the back of a spoon.

- 1/4 cup chopped scallions
- 2 cloves garlic, minced
- 1/2 cup whole milk
- 2 ounces cheddar jack cheese, shredded
- 1/2 cup plain yogurt
- Salt and pepper to taste
Instructions
- Add 3 quarts of water and 1 tablspoon salt to a large stock pot.
- Add the cubed potatoes and bring the water to a boil.
- Lower the heat to a simmer and boil uncovered for 10-15 minutes.
- While the potatoes are boiling, melt the butter in a medium sized saucepan.
- Add the scallions and garlic to the melted butter. Cook until they become tender, remove from heat.
- Once the potatoes are ready, drain and add them to a stand mixer.
- Whisk on medium speed until the potatoes are fully mashed.
- Add the butter mixture, whisk until just combined.
- Add the yogurt, milk, cheese, and salt and pepper to taste. Whisk until combined and smooth.
- Serve topped with additional cheese and scallions.
