I’m excited to announce this is my 100th post! And what better way to celebrate 100 posts than to write about one of my most favorite subjects… cookies.
Chewy Oatmeal Coconut Chocolate Chip Cookies are a classic treat in my home. I’ve had the recipe in my collection for close to 20 years now, and they are still one of my favorites. In fact, we lovingly refer to them as “The Best Cookies Ever.”
Sometimes I like to change up Chewy Oatmeal Coconut Chocolate Chip Cookies by adding 1/2 teaspoon ground cinnamon to the dough, or by replacing 1/2 cup of the chocolate chips with cinnamon chips. The cinnamon flavor pairs so nicely with the oatmeal and coconut.
Did you know that oatmeal can go stale if it’s been in your pantry too long? This is especially true if it’s been opened. Stale oatmeal does not make for good cookies. Before baking, it’s always a good idea to double check that your ingredients are all fresh.
Here’s what you need to make Chewy Oatmeal Coconut Chocolate Chip Cookies…
- Margarine
- White sugar
- Brown sugar
- Eggs
- Vanilla
- Flour
- Salt
- Baking soda
- Oatmeal (not quick)
- Chocolate chips
- Shredded coconut
Chewy Oatmeal Coconut Chocolate Chip Cookies
CHEWY OATMEAL COCONUT CHOCOLATE CHIP COOKIES - Soft and delicious cookies made with chocolate chips, oatmeal, and shredded coconut.
Ingredients
- 2 sticks margarine (not butter), at room temperature
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs, at room temperature
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups oatmeal (not quick)
- 2 cups chocolate chips
- 1 cup shredded coconut
Instructions
- Preheat oven to 375.
- In a stand mixer add the margarine, white sugar, and brown sugar. Beat for about 5 minutes, until light and fluffy.
- Add in the eggs and vanilla. Beat for 1 minute.
- Add in the flour, salt, and baking soda. Mix to combine.
- Add in the oatmeal, coconut, and chocolate chips. Mix until fully incorporated.
- Using a 3 tablespoon-sized scoop, portion out the cookie dough onto a baking sheet.
- Bake for 8-10 mintues, until edges start to turn golden.
- Cool on baking sheet for about 10 mintues before moving.
