Chex Lemon Buddies is a light and fresh alternative to the original Chex Muddy Buddies. It’s a quick and simple treat that’s great all on its own, or as part of a larger snack spread.
I recently brought this to a family gathering, and they were a big hit. Even my husband, who doesn’t generally like the original version, loved them.
White chocolate chips can seize up if you microwave them for too long. You will want to monitor that closely. I like to pull the mixture out of the microwave just before the white chocolate chips are completely melted, then whisk until completely smooth.
Store Chex Lemon Buddies in an airtight container for up to 3-4 days. But, don’t be surprised if you finish them off long before they go stale.

- Rice Chex cereal
- White chocolate chips
- Butter or margarine
- Lemon zest
- Lemon juice
- Powdered sugar
Chex Lemon Buddies
CHEX LEMON BUDDIES - This simple snack is sweet and crunchy with a burst of fresh lemon flavor.
Ingredients
- 9 cups Rice Chex cereal
- 1 1/4 cups white chocolate chips
- 1/4 cup butter or margarine
- 4 teaspoons lemon zest
- 2 tablespoons fresh lemon juice
- 2 cups powdered sugar
Instructions
- Premeasure the cereal, set aside.
- In a medium-sized microwaveable bowl, add the white chocolate chips, butter (or margerine), lemon zest, and lemon juice.
- Heat for 1 minute and stir. Heat for another 30 seconds. Whisk until smooth.
- Pour the white chocolate mixture over the Rice Chex, stir until covered completely.
- In a 2-gallon resealable plastic bag, add the powdered sugar and the Rice Chex. Seal closed.
- Shake and adjust the bag as needed to evenly distribute the sugar over the Rice Chex.
- Spread the Lemon Buddies out over parchment paper to cool.
- Store in an airtight container.
