If you’re like me, you’re desperately in need of a good salad after all the junk food from Super Bowl Sunday. Chicken Pecan Salad with Sweet Honey Dijon Dressing is the perfect fix.
The salad is full of protein and flavor. I especially love the balance of the honey dijon dressing with the bacon and chicken. It’s delightful.
This recipe calls for grilled chicken. If you don’t have any leftover grilled chicken lying around, or you’re in a time crunch, you can always pick up packaged grilled chicken at the grocery store.
I’ve had good luck with the Good & Gather at Super Target. Packaged grilled chicken may not be the most cost conscious option, but it’s so convenient.
When serving up a green salad, I sometimes leave each ingredient in its own serving dish and allow my family to build their salads to taste. This allows me to also store leftover ingredients separately in the fridge, helping them to last much longer.

CHICKEN PECAN SALAD WITH SWEET HONEY DIJON DRESSING - A beautiful green salad loaded with grilled chicken, thick-sliced bacon, toasted pecans, and avocados. It's a healthy dish that's bursting with flavor.
Ingredients
- 6 ounces grilled chicken, sliced
- 2 strips thick sliced bacon, cooked and cut into 1/2 inch strips
- 1/2 cup pecan halves, toasted
- 3 cups romaine lettuce, chopped
- 3 cups spring mix, chopped
- 1/2 cup tomatoes, diced
- 1/4 cup cheddar jack cheese, shredded
- 1/4 cup carrots, julienned
- 6 slices avocado
- Croutons
- Easy Honey Dijon Dressing
Instructions
- In two serving bowls, layer the romaine and spring mix.
- Add the grilled chicken.
- Arrange the bacon, toasted pecans, tomatoes, cheese, carrots, avocados, and croutons.
- Drizzle the dressing over top as desired.
