CILANTRO LIME RICE – Light and fluffy rice flavored with lime and cilantro. It’s the perfect side dish to pair with your favorite tacos, burritos, or enchiladas.
Cilantro Lime Rice is one of those staple recipes that I think everyone needs in their collection. It’s quick and simple to make, and it’s wonderfully versatile.
I’ve had this recipe in my collection for many years, and I can always count on it to be a crowd pleaser. I especially love that it helps any meal to stretch a little farther and be a little more substantial.
Cilantro Lime Rice calls for 4 tablespoons of chopped fresh cilantro. If you like cilantro, but don’t love it, you can reduce the amount to 3 or even 2 tablespoons of fresh cilantro.
To reheat the rice, place in a microwavable bowl, add a small amount of water, cover with a damp paper towel, and heat. The amount of water and heat time will depend on the amount of rice you’re wanting to reheat.
Store leftovers in an airtight container for 2-3 days.

- Long grain white rice
- Butter
- Garlic
- Fresh lime juice
- Chicken broth
- Water
- Sugar
- Fresh cilantro
Cilantro Lime Rice
CILANTRO LIME RICE - Light and fluffy rice flavored with lime and cilantro. It's the perfect side dish to pair with your favorite tacos, burritos, or enchiladas.
Ingredients
- 1 cup long grain white rice
- 1 teaspoon butter
- 2 cloves garlic, minced
- 1 tablespoon plus 2 teaspoons fresh lime juice
- 1 (15 ounce) can chicken broth
- 1 cup water
- 2 teaspoons sugar
- 4 tablespoons fresh chopped cilantro
Instructions
- In a medium-sized saucepan, add the rice, butter, garlic, 2 teaspoons of the fresh lime juice, and the chicken broth.
- Bring to a boil. Cover and turn the heat to low. Cook for 15-20 minutes, until the rice is tender and the water is absorbed.
- Remove from heat.
- In a small bowl, add the remaining 1 tablespoon of fresh lime juice, sugar, and chopped cilantro.
- Pour the lime juice mixture over the hot rice. Use 2 forks to fluff the rice as the mixture is incorporated.
- Serve warm.
Notes
If the rice is fully cooked before all the liquid is absorbed, you can remove it from heat and let it rest covered for a few mintues. See post for how to reheat without making the rice crunchy.
