Nothing warms you up better on a cold day like beef stew. This recipe is so yummy. You will hardly believe how simple it is!
It’s also a great stew to make when you have company over. Serve it with a side salad and some buttered rolls to make it a complete meal.
I like to use petite red potatoes in this recipe. I think they’re easier to cut into bite-sized pieces, and I just leave the skin on to make the prep time even faster.
You can alternatively cook the stew in a dutch oven, baking it at 350 for about 3 hours. My afternoons are generally busy and chaotic, so I prefer using a slow cooker so I can get it started earlier in the day.

- Condensed tomato soup
- Water
- Basil
- Beef bouillon
- Pepper

Ingredients
- 2 pounds stew beef, cut into bite-sized pieces
- 4-5 medium red potatoes, chopped
- 4-5 medium carrots, peeled and chopped
- 4 celery stalks, chopped
- 1/2 onion, chopped
- 4-5 cloves garlic, minced
- 2 (12 ounce) cans of vegetable juice cocktail
- 1 (10 ounce) can condensed tomato soup
- 10 ounces water
- 1 teaspoon basil
- 2 beef bouillon cubes
- 1/2 teaspoon pepper
Instructions
- Combine everything into a slow cooker.
- Cook on low for 6-8 hours, until the beef is cooked and tender.
