Coconut Rice has been one of my go-to side dishes for quite some time. It’s fresh, savory flavor with the perfect touch of sweet to balance the dish makes it very versatile.
In general, I love rice as a side dish. It’s usually simple and quick to make, and it’s relatively cheap. I especially love that I can get the rice started and let it steam while I tend to other parts of the meal.
Coconut Rice keeps well in the fridge for several days. If you plan out your week well, you might even be able to make the dish stretch to go with a few meals.
As I’ve mentioned before, rice is fairly easy to freshen up while warming. Add the rice to a microwave safe dish, add a little water, cover with a damp paper towel, and heat until warm. The added water will steam and keep the rice from becoming dry or crunchy.

- Rice
- Coconut milk
- Water
- White sugar
- Salt
- White vinegar
- Green onion
- Black pepper
Coconut Rice

Ingredients
- 2 cups rice
- 14 ounce can coconut milk
- 2 cups water
- 2-3 teaspoons white sugar
- 1 teaspoon salt
- Splash of white vinegar
- 1/4 cup chopped green onion
- Black pepper to taste
Instructions
- In a large saucepan combine the rice, coconut milk, water, salt, sugar and vinegar. Stir to combine.
- Bring to a boil.
- Set to low heat. Cover and cook for 20 minutes, or until most of the liquid is absorbed.
- Remove from heat, rest for 5 minutes.
- Add the chopped green onion and black pepper, stir to combine.
- Add additional salt as needed.
- Top with additional green onions.
