EASY SHEET PAN CHICKEN FAJITAS – Dinner couldn’t be much easier, or more delicious, than these flavorful chicken fajitas with onions and beautiful bell peppers.
Easy Sheet Pan Chicken Fajitas is one of the dishes that my family requests most frequently. I’m always happy to fulfill that request. They are not only delicious, but they’re incredibly simple to make.
This is a great dish to serve any night of the week. I like to pair it with something like Mexican Street Corn Salad or Coconut Rice.
Don’t leave out the liquid smoke! This ingredient is what makes this recipe absolutely delicious. I use hickory liquid smoke, but any flavor will do.
This recipe also calls for preheating the sheet pans before adding and baking the chicken and veggies. While this step is not absolutely essential, I would say that it is important. Searing the chicken and veggies adds flavor and texture.
Store leftovers in an airtight container in the fridge for 3-4 days.

- Tortillas

Easy Sheet Pan Chicken Fajitas
EASY SHEET PAN CHICKEN FAJITAS - Dinner couldn't be much easier, or more delicious, than these flavorful chicken fajitas with onions and beautiful bell peppers.
Ingredients
- 1 onion, cut into 1/2 moon strips
- 2 bell peppers (any color), cut into strips
- 2 tablespoons vegetable oil, divided
- 2 pounds boneless, skinless chicken breasts, cut into 1/4 inch strips
- 2-3 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 1 tablespoon soy sauce
- 1 teaspoon liquid smoke
- 1 teaspoon chili powder
- 1/2 teaspoon cumin (optional)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- Pinch of black pepper
- Fresh lime juice
- Tortillas
- Guacamole, cilantro, tomatoes, sour cream (optional toppings)
Instructions
- Preheat oven to 400.
- Prepare 2 sheet pans by covering them in aluminum foil and place in the oven to preheat for 5 minutes. If your sheet pans can fit side-by-side in the oven, you'll want to position them on the center rack. If your sheets pans do not fit side-by-side, position one on the upper rack and one on the lower rack.
- While the sheet pans are preheating, in a medium-sized mixing bowl add the onion and peppers. Add 1 tablespoon of oil, and salt and pepper to taste. Mix to evenly coat the veggies.
- In a second medium-sized mixing bowl, add the chicken, 1 tablespoon of oil, garlic, red wine vinegar, soy sauce, liquid smoke, chili powder, cumin, oregano, 1/2 teaspoon salt, and pepper to taste. Mix to evenly coat the chicken.
- Remove the sheet pans from the oven, carefully and quickly spread the veggies onto one sheet pan and the chicken onto the other.
- Return the sheet pans to the oven. If the pans are positioned on 2 different racks, the sheet pan with the chicken is better on the bottom rack.
- Bake for 6-7 minutes, until the chicken is cooked through. Remove the chicken from the oven.
- Bake the veggies for an additional 5-6 minutes, until they are tender.
- Transfer the chicken and veggies to a medium-sized bowl. Pour the fresh lime juice over the top, mix to combine.
- Serve immediately on top of warmed tortillas and desired toppings.
