FRENCH DIP SANDWICHES – Roast beef cooked with onion soup and beef broth in a slow cooker until tender and flavorful, then served on buns with melty cheese.
French Dip Sandwiches are a classic and frequently served dish in my home. My family always looks forward to this one. It’s a favorite for all of us.
It’s surprisingly quick and easy to prepare. The roast beef is seasoned, seared, then cooked all day in a slow cooker.
When serving French Dip Sandwiches, I set out tongs and a ladle. The tongs are good for pulling out the meat to top the rolls, the ladle is good to pull out some of the juices into a ramekin for dipping.
Store leftovers in the fridge for 3-4 days. I usually store it right in the slow cooker stoneware. Then I’ll set the slow cooker on low for an hour or so to warm up. The meat can alternatively be reheated in the microwave.

- Olive oil
- Reef roast
- Salt
- Pepper
- Dry onion soup mix
- Water
- Beef broth
- Sliced cheese
- Crusty buns or rolls
French Dip Sandwiches

Ingredients
- 2 tablespoons olive oil
- 3 pound beef roast
- Salt
- Pepper
- 2 (1 ounce) packets dry onion soup mix
- 2 cups water
- 2 (14.5 ounce) cans beef broth
- Sliced cheese (I use provolone)
- Crusty buns or rolls
Instructions
- In a large skillet, heat the oil to medium-high heat.
- Season the roast with salt and pepper to taste.
- Sear the roast in the skillet, about 1 minute per side until browned.
- Place the roast in the slow cooker.
- Add the dry onion soup mix packets, water, and beef broth.
- Cook on high for 4-6 hours (or low for 8-10 hours).
- The meat is done once the meat shreds easliy with two forks.
- Portion out the shredded beef on top of the crusty rolls, top with the sliced cheese.
- Ladle out some of the juices and serve on the side in a ramekin or small bowl for dipping.
