Grilled Chicken Thighs with White BBQ Sauce has been one of my favorite new recipes this summer. It’s a quick and easy dish that’s big on flavor. I’ve had nothing but rave reviews, and I’ve had several recipe requests.
It’s times like these that I’m reminded of what I love about having food blog. It get’s me out of the rut of using the same old recipes all the time, I end up finding new recipes that I love, and it’s really easy to share those recipes.
This recipe calls for skin-on, bone-in chicken thighs. If that’s not available, boneless skinless chicken thighs will work just fine. You will just want to adjust the grilling time. The boneless chicken will cook a bit faster.
This recipe also calls for several dried spices. There is a big difference between a dried spice and the ground counterpart. Don’t mix them up! Ground spice is going to be more potent, therefore less is needed for the recipe. In this case 1 teaspoon of dried thyme is equal to 1/2 teaspoon of ground thyme.
Store leftover chicken thighs covered in the fridge for up to 3-4 days. Store the white BBQ sauce in an airtight container in the fridge for up to 4-5 days.

- Chicken thighs
- Thyme
- Dried oregano
- Paprika
- Ground cumin
- Onion powder
- Salt
- Freshly ground pepper

Grilled Chicken Thighs with White BBQ Sauce
GRILLED CHICKEN THIGHS WITH WHITE BBQ SAUCE - Beautiful chicken thighs covered in a dry rub, grilled, then served with a tangy BBQ sauce. Your guests will be begging for the recipe.
Ingredients
- 10 chicken thighs, skin-on and bone-in, about 3 pounds
- 1 tablespoon dried thyme (or 1/2 tablespoon ground thyme)
- 1 tablespoon dried oregano
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- Alabama-Style White BBQ Sauce
Instructions
- Rinse the chicken thighs and pat dry. Place the thighs skin side down in a 9x13 pan.
- In a small bowl, add the thyme, oregano, paprika, cumin, onion powder, salt, and pepper. Whisk to combine.
- Sprinkle about half of the mixture on the chicken thighs. Rub in and flip the thighs over. Sprinkle the remaining mixture on the chicken thighs and rub in.
- Cover and chill for 4-5 hours.
- Grill over medium-high heat, 8-10 minutes, until cooked through.
- Serve with White BBQ Sauce.
