If you’ve spent much time in Hawaii, chances are you’ve eaten Hawaiian Macaroni Salad (Mac Salad). It’s a side dish frequently served at the island restaurants.
My husband and I recently visited Oahu and were introduced to this local favorite. We instantly fell in love with it, and I knew I needed to learn how to make it at home.
Hawaiian Macaroni Salad (Mac Salad) is not the same as main land macaroni salad. The sauce is more sweet than tangy.
The beauty of this salad is that it is so simple! Simple to make but also mild in flavor, which helps it to blend well with almost any main dish.
Store leftovers in an airtight container in the fridge for 3-4 days. Before serving, stir it up and add more mayonnaise as needed.

- Carrot
- Sweet onion

Hawaiian Macaroni Salad (Mac Salad)
HAWAIIN MACARONI SALAD (MAC SALAD) - This quick and simple side dish mixes pasta and carrots in a sweet and creamy sauce. It's the perfect addition to any BBQ.
Ingredients
- 1 pound elbow pasta, cooked according to package directions
- 2 cups mayonnaise
- 1/2 cup shredded carrot, about 2 medium carrots
- 1/3 cup shredded sweet onion, about 1/2 onion
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 teaspoon ground pepper
Instructions
- In a large mixing bowl whisk together the mayonnaise, sugar, salt, and pepper.
- Add in the shredded carrot and shredded onion, stir to combine.
- Add in the pasta. If the noodles are freshly cooked, run cold water over them in a colander before adding to the mayonnaise mixture. Mix to combine.
- Chill for at least 2 hours before serving.
