Cookies are kind-of my thing. I’m not saying I’m a professional or anything. I just really, really love cookies, and I’m always on the lookout for great recipes.
I have not always considered myself to be a good baker, however knowing how to make good cookies has always been a priority for me.
I’ve also made a point to teach each of my kids how to make good cookies, as I feel like it’s an essential life skill. I always have supplies on hand, so even the slightest hint of a cookie request is quickly fulfilled.
These cookies always come out soft and fluffy. Which is important because I live in Colorado where the high altitude can easily make cookies tragically flat.

- Salted butter
- Sugar
- Brown sugar
- Vanilla
- Eggs
- Flour
- Baking soda
- Salt
- Chocolate chips
Jo's Favorite Chocolate Chip Cookies
JO'S FAVORITE CHOCOLATE CHIP COOKIES - Soft cookie lovers of the world, these just may be your new favorite chocolate chip cookie!
Ingredients
- 16 tablespoons salted butter
- 1 cup sugar
- 1/2 cup brown sugar
- 2 teaspoon vanilla
- 2 eggs
- 3 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups chocolate chips
Instructions
- Preheat oven to 350.
- Partially melt the butter (until the middle of the stick is melted, but the outside is still solid) and let cool for a bit.
- In stand mixer, beat butter, sugar and brown sugar until creamy and it lightens in color.
- Add the vanilla and eggs, combine on low speed until barely incorporated.
- In a seperate medium-sized bowl whisk together the flour, baking soda and salt.
- Slowly add to butter mixture, careful not to overmix.
- Add in the chocolate chips, stir to combine.
- Section into 1 1/2 tablespoons-sized balls and place about 2 inches apart on cookie sheets.
- Bake 9-11 minutes.
- Let cool on pan for 15-20 minutes before removing.
