KEY LIME COOLERS – These delightful little cookies are bursting with lime flavor.
Recently my family visited Savannah. While we were touring the city we came across the cutest little cookie shop.
We were invited to stand at the “Cookie Bar” and we would be given unlimited amounts of free samples. I was instantly in love! I’m pretty sure I tasted every option available.
My most favorites where the coolers, crispy little cookies that are covered in powdered sugar and bursting with flavor. I immediately made it my mission to learn how to make these amazing bite-sized treats.
Coolers are meant to be kept in the freezer and eaten frozen, perfect for a hot summer day. If that’s not your thing they’re just as delicious at room temperature.
Here’s what you need to make Key Lime Coolers…
- Butter
- Sugar
- Salt
- Baking powder
- Lime juice powder
- Key lime juice
- Lime oil
- Egg
- Flour
- Powered sugar
Key Lime Coolers
KEY LIME COOLERS - These delightful little cookies are bursting with lime flavor.
Ingredients
- 3/4 cup butter, softened
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon plus 2 tablespoons lime juice powder, divided
- 2 tablespoons key lime juice
- 1/8 teaspoon lime oil
- 1 egg
- 2 1/2 cups flour
- 1/2 cup powered sugar
Instructions
- Preheat oven to 350 and line baking sheet with parchment paper.
- In stand mixer combine together butter, sugar, salt, baking powder and 1 teaspoon lime juice powder. Beat until well blended.
- Add the lime juice, lime oil and egg. Beat until combined.
- Add in the flour and beat until completely incorporated.
- Scoop into 1 inch balls and flatten slightly on baking sheet.
- Bake for 14-16 minutes, until golden brown on the bottoms. Cool on pan for about 10 minutes.
- While cookies are cooling whisk together the powdered sugar and 2 tablespoons lime juice powder.
- Roll the slighly cooled cookies in the powdered sugar mixure and shake off any excess.
- Cool cookies completley and repeat the process of rolling in the powdered sugar mixture. Save any leftover of the mixture.
- Store in an air tight container and roll cookies in powdered sugar mixture before serving if needed.
- You can also store these cookies in the freezer and enjoy as a cool treat.
