If you’re in the mood for something gooey and delicious, Marshmallow Fudge Brownies will hit the spot. They’re a fun adaptation of classic brownies, and they’re a huge hit every time I make them.
The recipe calls to use a 1/2 sheet pan to bake the brownies (18x13x1). If you don’t have that on hand, you can make them in a 9×13 pan (and bake for a little longer). Each brownie layer will end up being thicker, making each bite much more rich.
I like my brownies more fudge-like, so I like to bake these brownies closer to 22 minutes. If you want to make them more cake-like, I would recommend baking them a few minutes more.
Marshmallow tends to stick back together after you’ve cut into it. So once you’ve cut Marshmallow Fudge Brownies into portions, you’re going to want to transfer them to a serving platter right away.

- White sugar
- Cocoa
- Eggs
- Flour
- Salt
- Vanilla extract
- Mini marshmallows
- Milk
- Powdered sugar
Marshmallow Fudge Brownies

Ingredients
Brownie
- 1 cup butter, room temperature
- 2 cups sugar
- 1/3 cup cocoa
- 4 eggs
- 1 1/2 cup flour
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- 10 ounces mini marshmallows
Frosting
- 1/2 cup butter, room temperature
- 2 tablespoons milk, more as needed
- 1 teaspoon vanilla extract
- 4 tablespoons cocoa powder
- 3 cups powdered sugar
Instructions
- Preheat oven to 350.
- Grease a half sheet baking pan (18x13x1 inch pan).
- In a stand mixer, add the butter, sugar, and cocoa. Beat until light and fluffy.
- Add the eggs one at a time, mixing after each one has been added.
- Add the flour, salt, and vanilla. Mix until fully combined.
- Spread batter over prepared baking pan.
- Bake 22-25 minutes.
- Remove the pan from the overn and layer mini marshmallows over the top.
- Bake for another 3 minutes, until the marshmallows begin to puff up.
- Cool completely.
- To make the frosting: in a stand mixer, add the butter, milk, and vanilla. Mix until combined.
- Add the cocoa powder, mix until combined.
- Add the powdered sugar a little at a time, mix until fully combined.
- Add more milk as needed to make the frosting thin enough to spread easliy over the marshmallow layer.
- Spread over the brownies. Cut into 2x2 inch squares and serve.
