If you’re looking for a side dish to bring to your next BBQ, Mexican Street Corn Salad is it! It’s quick and easy to make up, and the flavor combination makes it a definite crowd pleaser.
This tasty little side dish was introduced to me by a good friend. She brought it to a BBQ my family was putting together. I didn’t just go back for seconds, I went back for thirds.
Mexican Street Corn Salad is also quickly becoming a family favorite. Let’s just say I’ve gone through a lot of corn this Summer.
I recommend doubling the recipe for larger crowds. It will start to disappear quickly once your quests get a taste of it.

- Corn
- Olive oil
- Garlic
- Mayo
- Sour cream
- Lime, zest and juice
- Chili powder
- Paprika
- Black pepper
- Salt
- Cotija cheese
- Cilantro
Mexican Street Corn Salad
MEXICAN STREET CORN SALAD - Corn fresh off the cob, toasted then tossed with a creamy lime sauce and finished off with Cotija cheese and cilantro. This quick salad is perfect for warm weather!
Ingredients
- 5 ears of corn, about 4 cups
- 1 1/2 tablespoons olive oil
- 1 clove garlic, minced
- 2 tablespoons mayo
- 2 tablespoons sour cream
- I lime, zest and juice
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- Salt to taste
- 3/4 cup Cotija cheese, crumbled
- 1/4 cup cilantro, chopped
Instructions
- Cut the corn from the cobs.
- Heat a large skillet to medium heat, add the oil.
- Add the corn. Stir occationally until it browns slightly, about 5 mintues.
- Add in the garlic. Stir and cook for about 30 seconds.
- Remove from heat.
- While the corn rests, in medium sized bowl whisk together the mayo, sour cream, lime zest and juice, chili powder, paprika and pepper.
- Add the corn to the mayo mixture and sitr to combine.
- Add the cheese and cilantro, stir to combine.
- Add salt to taste, serve warm or chilled.
