I first tried Million Dollar Bacon at one of my favorite brunch restaurants in town, First Watch. Instant fan! It’s a delicious alternative to classic bacon.
At first bite, Million Dollar Bacon is sweet. Then it finishes off with a bit of a kick from the cayenne pepper.
I wouldn’t consider the bacon spicy, just a bit of a kick. However if you’re spice sensitive, I would suggest trying the recipe with 1/4 teaspoon of cayenne pepper, rather than 1/2 teaspoon.
Million Dollar Bacon is the perfect addition to any breakfast dish. It would also be great as a burger topper, as a pizza topping, or inside a grilled cheese sandwich. It can be stored in the fridge for 4-5 days.

- Brown sugar
- Black pepper
- Cayenne pepper
- Maple syrup
- Water
- Thick sliced bacon
Million Dollar Bacon

Ingredients
- 1/2 cup brown sugar
- 1/2 tablespoon black pepper
- 1/2 teaspoon cayenne pepper
- 1/4 maple syrup
- 1/4 water
- 1 pound thick sliced bacon
Instructions
- Preheat oven to 325.
- Line a large sheet pan or cookie sheet with parchment paper.
- Combine the brown sugar, black pepper, cayenne pepper, maple syrup, and water. Whisk until the brown sugar has disolved.
- Drag each slice of bacon through the glaze, allowing each to drip off excess liquid, then place on the prepared pan.
- Bake for 15 minutes.
- Rotate pan and bake for an additional 5-10 minutes, or until bacon is fully cooked to desired crispness.
- Move cooked bacon to a plate lined with paper towels to cool slightly. Serve immediately.
