When Fall comes around I get really excited for all the pumpkin flavored treats! Pumpkin Chocolate Chip Mini Loaves is usually one of the first I make in the season, as soon as there’s even a hint of Fall weather (or maybe even a few weeks before that).
The original recipe calls for 2 cups of chocolate chips. So if you’re in the mood for really chocolatey pumpkin bread, go ahead and double the chips.
I love to make this recipe into mini loaves so I can easily share with friends and neighbors. To make full sized loaves, grease 3 loaf pans and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Pumpkin Chocolate Chip Mini Loaves freeze really well, in case you don’t want to share. If you want to save some for later use, wrap the loaves individually in tin foil and group together into freezer bags.

- Baking powder

Pumpkin Chocolate Chip Mini Loaves

Ingredients
- 1 (15 ounce) can pumpkin
- 4 eggs
- 1 cup vegetable oil
- 2/3 cup water
- 3 cups sugar
- 3 1/2 cups flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1 cup mini chocolate chips
Instructions
- Preheat oven to 350.
- Grease 8 mini loaf pans.
- In a large bowl, whisk the pumpkin, eggs, oil, water and sugar.
- In a medium-sized bowl, whisk the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
- Add the flour mixture to the pumpkin mixture and combine until well blended.
- Stir in the chocolate chips.
- Evenly distribute the batter into the mini loaf pans (3 in x 5 3/4 in).
- Bake for 35-40 minutes, until a toothpick inserted into the center comes out clean.
