Sausage Tortellini Soup is one of my husbands all-time favorite soups that I make. I can always count on him to say something along the lines of “oh, that’s a good soup” or “I really like this one.”
And I completely agree, this is a tasty soup. It’s also a great soup to make when you have company over or are making a meal for a friend.
I always use fresh pasta when making Sausage Tortellini Soup. Dried pasta is great for convenience, and is generally more affordable, but fresh is so much better.
You can add more or less sausage to taste. I also like to serve fresh French bread on the side. You can store leftovers in the fridge, it warms up nicely later.

- Onion
- Garlic
- Petite diced tomatoes
- Tomato sauce
- Apple cider
- Water
- Chicken broth
- Carrots
- Dried oregano
- Dried basil
- Dried parsley
- Zucchini
- Cheese tortellini
- Fresh parmesan cheese
Sausage Tortellini Soup
SAUSAGE TORTELLINI SOUP - A hearty tomato based soup comprising of sausage, tortellini, carrots, and zucchini. It's perfect for a cold day and will make your house smell like heaven.
Ingredients
- 4 links of Italian sausage
- 1/2 onion, diced
- 4 cloves garlic, minced
- 1 (14.5 ounce) can petite diced tomatoes
- 1 (8 ounce) can tomato sauce
- 1/2 cup apple cider
- 1/2 cup water
- 2 (15 ounce) cans chicken broth
- 1 cup sliced carrots
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 tablespoons dried parsley
- 1 medium-large zucchini (or 2 small)
- 1 (12 ounce) package cheese tortellini
- Fresh parmesan cheese
Instructions
- Slice open the casings on the link sausage, remove the sausage and add to a large soup pot. Set heat to medium. Begin cooking, crumbling the sausage as it cooks.
- Add the onion and garlic, heat until the onion is translucent and the sausage is fully cooked.
- Add the tomato, tomato sauce, apple cider, water, chicken broth, carrots, oregano and basil. Stir to combine.
- Bring to a simmer, cover and let simmer for about 1/2 hour.
- Add in the parsley and zuchini, simmer for about 15 minutes.
- Add the tortellini, cook until tender and cooked through.
- Serve topped with fresh parmesan cheese.
