Slow Cooker Taco Soup is another great crock pot recipe! It’s a perfect balance of fresh ingredients and canned goods, making prep time super quick.
I love topping Slow Cooker Taco Soup with tortilla strips. It adds a little crunch to every bite. You could alternatively serve it with corn or tortilla chips for scooping. Also, if you’re a fan of beans, go ahead and add a second can of beans to the recipe.
Don’t have a slow cooker or maybe you don’t have time to get this soup started early? Not a problem! You can cook it on the stove over low heat for about an hour, stirring occasionally.

Ingredients
- 2 pounds ground beef
- 1 onion, diced
- 2 (4 ounce) cans diced green chiles
- 1 (10 ounce) can Rotel
- 1 (14.5 ounce) can petite diced tomatoes
- 1 (14.5 ounce) can Mexican style tomatoes
- 1 (15 ounce) can whole kernel corn, drained
- 1 (16 ounce) can pinto beans, drained
- 1 ounce packet ranch salad dressing mix
- 1 ounce packet taco seasoning mix
- 1 (3.8 ounce) can sliced olives
- Green onions, chopped
- Jalapeños, diced
- Shredded cheese
- Sour cream
- Tortilla strips
Instructions
- In a large skillet, cook the ground beef and onion.
- Drain off the grease.
- In a slow cooker, add the ground beef and onions, canned green chiles, Rotel, petite diced tomatoes, Mexican style tomtatoes, whole kernel corn, and pinto beans. Stir to combine.
- Add the ranch salad dressing mix and taco seasoning mix. Stir to combine.
- Cook on low for 6-8 hours, stirring occasionally.
- Serve and top with sliced olives, green onions, jalapeños, shredded cheese, sour cream, and tortillas strips to taste.
