My husband requested tostadas for Father’s Day this year. Looking for something new to try, I came across Spicy Dr. Pepper Pulled Pork. Delicious, and so easy! The perfect combination for a family celebration, yummy food with plenty of time leftover for activities.
This summer “simple” and “minimal time commitment” have been the themes of most of my meal planning. Let’s be honest, folks. You can never have too many go-to simple recipes that can feed a crowd.
I served Spicy Dr. Pepper Pulled Pork over tostadas. Pulled pork is an extremely versatile dish. It can be a filler for tacos, burritos, nachos, and quesadillas. It can be used to make sandwiches, layered inside a grilled cheese, thrown on top of a salad, or even added to an omelet.
If you’re not feeding a crowd, and you find yourself with a lot of leftovers. Instead of trying to eat pulled pork with every meal for the next 4 days, try freezing leftovers in portions sizes. You can pull out what you need for just one meal at a time.
Store leftover Spicy Dr. Pepper Pulled Pork covered in the fridge for up to 4 days. Pulled pork can also be stored in the freezer for up to 3 months. I like to double wrap the meat in resealable plastic or silicone bags before freezing. Then when I’m ready to use it, I allow the meat to thaw in the fridge several hours or possibly overnight, depending on how much I’m trying to thaw out.

- Onions
- Whole pork butt roast
- Canned chipotle chiles in adobo sauce
- Dr. Pepper
- Dark brown sugar
- Salt and pepper
Spicy Dr. Pepper Pulled Pork
SPICY DR. PEPPER PULLED PORK - Pork roast slow cooked with chipotle chiles, Dr. Pepper, and brown sugar. This simple recipe is packed with flavor.
Ingredients
- 2 white onions, peeled and quartered
- 1 (4-5 pound) whole pork butt roast, trimmed of fat
- 1 (11 ounce) can chipotle chiles in adobo sauce
- 2 (12 ounce) cans Dr. Pepper
- 4 tablespoons dark brown sugar
- Salt and pepper to taste
Instructions
- In a large crock pot, add the quartered onions.
- Generously salt and pepper both sides of the roast and add it to the crock pot.
- Pour the chipotle chiles over the top, then the cans of Dr. Pepper, and dark brown sugar. Push any chiles that might be on top of the pork into the liquid and mix it up a bit.
- Place the lid on top, and cook on high for 5-6 hours (time will depend on size of roast). Towards the end of the cooking time, check the roast every 1/2 hour.
- Once the roast is tender and is easily shredded, pull it out of the crock pot. Shred the roast and remove any excess fat. I like to keep a small bowl close by to collect the fat.
- Pour the liquid (with the onions and chiles) into a blender and blend on medium until well blended.
- Return the shredded pork to the crock pot and enough of the blended liquid to nearly cover the shredded pork. Allow it to sit on the warm setting until you're ready to use it.
- Serve as a filler for tacos, burritos, quesadillas, tostadas, nachos, sandwiches, or whatever else you might want.
