STRAWBERRY SPINACH SALAD – Strawberries, cucumbers and apples combine perfectly in this fresh and colorful green salad.
Little known fact… I hate making green salad, and I do mean hate. I would much rather spend 1-2 hours making a cheesecake than to cut up vegetables to make a green salad. I know it doesn’t make any sense, but there it is.
I love this salad so much that I actually don’t mind preparing it. Maybe it’s because of all the fruit involved, or maybe it’s because it’s so colorful when it’s done. Who knows!
Strawberry Spinach Salad was originally inspired by salads my husbands mother makes, and it is frequently served in our home. We serve it for special occasions, when we’re entertaining guests or whenever we just feel like it.
I like to really load on the toppings, as pictured. However, feel free to build the salad according to taste.
You can also try to add chicken to the salad to make it a more substantial dish. My favorite dressing to pair it with is Blush Wine Vinaigrette from Brianna’s.

- Apple

STRAWBERRY SPINACH SALAD - Strawberries, cucumbers and apples combine perfectly in this fresh and colorful green salad.
Ingredients
- 1 head romaine lettuce, chopped
- 1 1/2 cups baby spinach, chopped
- 1 apple, sliced
- 1 medium cucumber, sliced
- 1 cup strawberries, sliced
- Dried cranberries
- Sliced almonds
- Feta cheese
- Dressing
Instructions
- Layer in a medium-sized bowl the lettuce, spinach, apples, cucumber and strawberriesl.
- Top with cranberries, almonds and feta. Serve with a blush vinaigrette or creamy poppyseed dressing.
