- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 5 eggs, divided
- 1 cup granulated sugar, divided
- 1/3 cup whole milk
- 1 tablespoon Mexican vanilla blend
Three Milks
- 12 ounce can evaporated milk
- 14 ounce can sweetened condensed milk
- 7.6 ounce can Media Crema (table cream)
- 1 tablespoon Mexican Vanilla Blend
Topping
- Double recipe of Homemade Whipped Cream
- 3 cups of fresh berries
- Ground cinnamon, for dusting
Instructions
- Preheat oven to 350°F.
- Separate eggs into two bowls (yolks in one, whites in another).
- In a large bowl, whisk flour, baking powder, and salt.
- Beat egg yolks with ¾ cup sugar until pale yellow. Stir in milk and Mexican vanilla blend. Gently fold this into the flour mixture until just combined.
- Beat egg whites to stiff peaks, gradually adding remaining ¼ cup sugar.
- Fold whites into batter gently until incorporated.
- Pour into un-greased 9×13 pan and spread evenly.
- Bake 25–35 minutes, until a toothpick comes out clean and cake springs back. Let cool completely.
- Whisk three milks together with the Mexican vanilla blend.
- Poke cake all over with a fork. The holes should be evenly distributed and spaced about 1/2 inch apart. Slowly pour milk mixture evenly over cake, letting it soak in. Cover and refrigerate at least 6 hours (overnight is best).
- Top with whipped cream, berries, and a sprinkle of cinnamon before serving.
