I made Vanilla Glazed Cashews for the first time this week, and they are addicting! They earned me several compliments and requests for the recipe. I will be making these again very soon.
My whole kitchen was filled with the most delicious vanilla scent while the cashews slowly roasted in the oven. I could hardly wait long enough for them to bake and cool.

I used vanilla extract for Vanilla Glazed Cashews. The Sweetest Bean also sells double strength vanilla extract, vanilla bean powder, as well as whole vanilla beans.
Store Vanilla Glazed Cashews in an airtight container for 1-2 weeks. You can also store them in the fridge for up to 1 month. But if you’re house is anything like mine, there’s no way these are lasting longer than a few days.

- Brown sugar
- White sugar
- Salt
- Ground cinnamon
- Egg white
- Vanilla extract
- Whole raw cashews
Vanilla Glazed Cashews
VANILLA GLAZED CASHEWS - These irresistible roasted cashews are covered in a sweet glaze that's flavored with vanilla and a touch of cinnamon.
Ingredients
- 1/4 cup light brown sugar
- 1/4 cup white sugar
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 egg white
- 2 teaspoons vanilla extract
- 1 pound whole raw cashews
Instructions
- Preheat oven to 300, with a rack positioned in the middle.
- Line a 1/2 sheet pan (18x13) with parchment paper.
- In a small bowl add the brown sugar, white sugar, salt, and cinnamon. Whisk to combine.
- In a seperate small bowl, whisk the egg white and vanilla until very frothy.
- In a medium-large bowl add the cashews then egg white mixture. Toss to coat evenly.
- Add in the sugar mixture about 1/3 at a time, mix to coat evenly after each addition.
- Pour the cashews into the prepared 1/2 sheet pan, spread into a single layer.
- Bake for 30 minutes, stirring after 10 and 20 minutes of baking.
- Let the cashews cool for 10 minutes.
- Separate the cashews into small clusters.
